Steps to decorate your cake when freezing cakes

I just started taking a Wilton cake decorating class on Tuesday. I baked my cake for the next class (Tuesday) and made 2 - 8" rounds. I wrapped each of the round cakes in Saran wrap and foil and put them in the freezer. I leveled one of the cakes already, but left the other one unleveled. I made the frosting, but I haven't torted or frosted it yet. I know it's easier to work with a cake fresh out of the freezer, but should I torte it after taking it out of the freezer? I made my frosting already, but haven't frosted it. I'm waiting to frost the cake after I torte it. Is this right?? I'm so confused about when to freeze the cake, when to take it out, etc.

~It sounds like you are doing everything right. There are a lot of little steps to decorating so I'll break it down.

Steps to decorate your cake when freezing cakes


  1. Bake cakes and allow to cool.

  2. Level your cake -you can also do this when the cakes are right out of the oven. See how we do it.

  3. Wrap cakes in saran wrap. Place in plastic bag or wrap in tin foil as well.

  4. Freeze cakes

  5. Take cakes out of freezer when ready to frost. Fill your cake with frosting or other filling. You can do this when the cake is frozen.

  6. Place second cake with top side down into the filling.

  7. Crumb coat or apply first layer of frosting. Your cake can still be frozen at this time or starting to unthaw. This actually helps to not get crumbs in your frosting when the cake is frozen.

  8. Allow to sit several hours. This will help keep your cake fresh by allowing the crumb coat to seal in the moisture.

  9. Finish decorating your cake
