Do I need to use Meringue Powder?
As far as using meringue powder in your cakes to make them taller, it's not necessary if you use the x-large eggs. Meringue powder is powdered egg whites. So, you can just use one or the other. I always like to use the x-large eggs just because a lot of times meringue powder has sugar or other additives in it too.
Meringue powder works great for using in royal icing. Royal icing uses egg whites but you don't want to risk salmonella so using meringue powder in place of the egg whites is a great way to make royal icing for your decorations.
If you want to use the meringue powder just use about 1 Tablespoon per cake mix or cake recipe.
~In the Royal icing recipe you use 3 Tablespoons.
