Lemon Cake
1 1/4 cups sugar
3 egg whites
1/2 cup butter
1 cup milk
2 cups cake flour
3 tsp baking powder
3/4 tsp salt
juice of 2 lemons
zest of 1 lemon
Directions:
Preheat oven to 375 degrees.
Grease 2 8" round pans using
pan
grease.
Sift together cake flour, baking powder, salt, and 1 cup sugar. Set
aside.
Beat egg whites until stiff, but still a little moist.
Beat in 1/4 cup sugar, gradually until mixture forms soft peaks. Set
aside.
To the flour mixture add butter, milk, lemon juice, and lemon zest.
Beat for 2-3 minutes.
Gently fold in egg whites.
Pour into greased pans and bake at 375 degrees for 25-30 minutes.
