Freezing Cakes Questions

Freezing Cakes

I like to melt down apricot preserves and spread that on my cakes before icing. I have to make a cake for Saturday with little time to bake/decorate Friday night or Saturday morning. If I bake the cake Thursday and put my apricot glaze on it, can I place it in the freezer, or even should I, then take it out Friday for decorating? Thanks for your input.

~Editor's Note: Hi, I would definitely do what you are thinking. Bake your cake Thursday and freeze it. I would probably decorate it on Friday evening so it will be ready for Saturday. I usually decorate my cakes a day in advance.

Freezing Cakes

How long can cakes be frozen, or how long in advance can I freeze my cakes before decorating. Sometimes I have several cakes in the same day.

I have frozen cakes months ahead. Allow them to cool and wrap them in several layers of plastic wrap. Then either wrap again in tin foil or place in a ziploc large plastic bag.

This makes it easier for me to prep and frost my cake later also. I always frost my cakes while they are frozen. You can read about how I do it here.

Steps to decorate your cake when freezing cakes

by Kristin
(San Diego )

I just started taking a Wilton cake decorating class on Tuesday. I baked my cake for the next class (Tuesday) and made 2 - 8" rounds. I wrapped each of the round cakes in Saran wrap and foil and put them in the freezer. I leveled one of the cakes already, but left the other one unleveled. I made the frosting, but I haven't torted or frosted it yet. I know it's easier to work with a cake fresh out of the freezer, but should I torte it after taking it out of the freezer? I made my frosting already, but haven't frosted it. I'm waiting to frost the cake after I torte it. Is this right?? I'm so confused about when to freeze the cake, when to take it out, etc.

Thanks!
Kristin

~It sounds like you are doing everything right. There are a lot of little steps to decorating so I'll break it down.

Steps to decorate your cake when freezing cakes

  1. Bake cakes and allow to cool.

  2. Level your cake -you can also do this when the cakes are right out of the oven. See how we do it.

  3. Wrap cakes in saran wrap. Place in plastic bag or wrap in tin foil as well.

  4. Freeze cakes

  5. Take cakes out of freezer when ready to frost. Fill your cake with frosting or other filling. You can do this when the cake is frozen.

  6. Place second cake with top side down into the filling.

  7. Crumb coat or apply first layer of frosting. Your cake can still be frozen at this time or starting to unthaw. This actually helps to not get crumbs in your frosting when the cake is frozen.

  8. Allow to sit several hours. This will help keep your cake fresh by allowing the crumb coat to seal in the moisture.

  9. Finish decorating your cake
