Diabetic Frosting
This diabetic frosting recipe contains a powdered sugar replacement
that can also be used in other icing recipes. Try this with the
diabetic
cake.
Powdered Sugar Replacement
- 2 cups nonfat dry milk powder
- 2 cups cornstarch
- 1 cup granulated sugar replacement
Directions
- Combine all ingredients in a food processor or blender. Whip
until well blended and powdered.
Sugar Free Icing Recipe
- 1/4 cup solid shortening
- 1/2 tsp vanilla flavoring
- 3/4 cup powdered sugar replacement (above)
- 1 Tablespoon milk
Directions
- Cream together shortening and vanilla until light and fluffy.
- Stir in powdered sugar replacement and milk until well blended.
- The icing may be a little thick. If so, add a tsp of milk at a
time until the desired consistency is reached.
Diabetic Icing Recipe
Here is a great diabetic icing recipe that I started using
recently. It's not stable enough to decorate with though.
However, the taste is incredible so I like to use it. I typically
frost the cake with this, then use my spatula to give it a textured
look. I decorate it with fresh fruit. Very nice, and very
easy.
Diabetic Icing
1 large package sugar free vanilla instant pudding mix
1 cup milk
1 8oz cream cheese
1 8oz frozen whipped topping thawed *
Combine pudding and milk and set aside to thicken
In a large bowl, beat cream cheese then mix in pudding. Fold in
whipped
topping and frost cake.
*What exactly is Frozen whipped topping?
Frozen whipped topping is just a pre-made whipped topping (whipping
cream that is beaten). For instance, in the States we have the
name brand frozen whipped topping Cool Whip. Typically, it's in
the supermarket near the pre-made pie crusts, etc.
You can make your own whipped topping very easily. Just use 8oz
of whipping cream. Chill a metal bowl and beaters (or whisk) in
the freezer until they are cool to the touch. Add your whipping
cream and beat until it forms peaks. If you make it up ahead of
time, be sure and put it in the refrigerator until you are ready to use
it.
