Can i put fondant on a red velvet cake with cream cheese icing under the fondant instead of buttercream? My daughter likes the look of fondant but wants cream cheese icing.
Answer: The problem you would have is cream cheese icing should be refrigerated until serving and fondant doesn't do well if refrigerated. If you are planning on decorating your cake and immediately serving it, it should work well.
Some people have mentioned they have chilled their fondant without problems. But in other cases the fondant can start "sweating" or get soft and sticky when it is refrigerated. Which in turn can cause problems with the decorations.
