How do you keep cakes from getting warm during the summer months? I have seen many cake decorators on the many cake shows place their cakes in a refrigerator. I have heard of placing them in a box before refrigeration to prevent cake sweating but it doesn't appear that these decorators are doing this.
Are they setting their refrigerators at a lower temperature? Setting the cake in a cool room doesn't help because the moment they hit that 93 degree heat that no car air conditioner can keep up with they begin to warm and then slide.
