This basket weave cake is a simple fruit cake topped with royal icing and pastillage flowers. I can be made for weddings, engagement,etc.
I made my traditional quick mix fruit cake.
½ cup Butter (Margarine)
½ cup Demerara Crystal Sugar
2 cups flour
1 cup yogurt
2 eggs well beaten
1 lb mix fruits.
1 ½ Tsp Baking powder
Essence, nutmeg, ground cinnamon and clove to taste.
-Mix butter and sugar until butter is completely dissolved.
-Sieve in flour gradually.
-dd yogurt, eggs , fruits and all other ingredients.
-mix completely to form a deliciously smelling dough, that should drop easily from a wooden spoon.
- Pour batter into a 9" baking pan of choice.
The baking time will differ, depending on your oven, but here is the tip; bake until when skewer or tooth pick inserted comes out relatively clean. If it comes out too clean the cake will be dry. If it still has batter that means the cake isn’t completely cooked.
Icing on the cake
When the cake is completely cool, ice with royal icing, two to three bases is the best for a professional look. When the bases are dried, mix and color royal icing to desired color. Fit icing bag, or icing syringe with basket weave tip and form basketweave design.
You can ice the top completely in basket weave or you can leave it half and write on the un-iced section.
At the sides make grass like and stem like designs with a three star tip or a plain writing tip.
