Cake Pans

The best kinds of cake pans to purchase are the shiny aluminum pans. These pans bake the best and most evenly brown cakes. I do not recommend purchasing cake pans with non-stick coating on them because they will not bake evenly. Stick to the regular aluminum pans and don't forget to use the pan coat recipe below.

Pan Grease

Pan Grease is used to coat your aluminum pans to keep them from sticking. You can purchase pre-mixed pan grease from companies such as Wilton or Country Kitchens. Your cakes will never stick when using a pan grease. The old fashioned grease and flour method is not 100%, pan grease is!

Cooling Racks

Cooling racks are important to have for your cakes to cool off.  They allow your cake to cool all the way around. Select a well-made, sturdy metal rack. I have found that it is better to have a large cooling rack as opposed to several small ones. You can use a large rack for both large and small cakes. Believe me when I say that trying to use two small racks to turn out one large cake will turn into a disaster. By disaster, I mean a cake split in at least two pieces. Lesson learned and passed on!

KitchenAid Classic Stand Mixer - White

Having a good quality mixer is an essential if you are going to make cakes. I started off using a hand mixer. The whole process just became tiring. After burning up at least a dozen hand mixers, I decided to invest in a KitchenAid Stand Mixer. It is well worth the money.

This thing is made to last and boy does it make things a lot easier. There are other stand mixers on the market, but I will always swear by my KitchenAid. If your budget doesn't allow for a stand mixer right now, find a good quality hand mixer to use.
